The Keto Lady Carnita Citrus Salad

This salad is so light and refreshing! Use it for dinner, or take it to a party! I love the light Keto Lady Citrus Vinaigrette that can also be found here!

THE KETO LADY CARNITA CITRUS SALAD

Ingredients are based on how many you are cooking for.

Recipe -

1 Del Real Foods Slow Cooked Pork Carnita ( from Costco) or make your own.

1 Tablespoon Keto Lady Taco Seasoning

2 medium Bell peppers and 1/2 large Onion (sliced and roasted in the oven or sauteed in a frying pan)

Lettuce

Avocado

Radishes

Shredded Cheddar

Pickled Jalepenos ( optional)

Fresh Lime

Cilantro

The Keto Lady Citrus Vinaigrette

1. Heat up Carnita mix in the microwave for 4 mins, then transfer to heated frying pan.

2. While browning Pork and pulling apart, add in 1 Tablespoon of The Keto Lady Taco Seasoning. Heat until combined. Set aside.

3. After pork is all done, and your peppers and onions are softened start to assemble your salad.

4. I like to present the salad in rows when Iā€™m feeding the family. But you can also put in a bowl.

5. Squeeze fresh lime over pork, add your dressing of choice and fresh cilantro if using!

Macros will vary depending on amounts used.

Feel free to use shrimp, beef, or chicken instead!
