The Keto Lady Garden Squash Gratin

This is so delicious! One of my favorite recipes! Especially if you garden! You can use both types of squash.. Zucchini and Summer Squash or one!

The whole family will love it! And it’s only 6 WW SMARTPOINTS per SERVING if you are on WW! You can also shave down points by using, milk, and fat free cream cheese in place of full fat. And get rid of the olive oil for pan spray..

I’m using the Keto Full Fat Version here

Ingredients-

3 Cups Sliced zucchini rounds
3 cups sliced Summer Squash rounds
1/2 cup Heavy Cream
4 Oz cream cheese
1 Tsp onion powder
2 Tablespoons Olive Oil
1 tsp Italian Spices
2 Tablespoons Panko Pork Rinds
1/2 Cup Grated Parmesan
Salt and pepper

Instructions-

Preheat oven to 450 degrees, grease a 2 quart baking dish with 2 tsps of the olive oil.

In a large skillet heat remaining oil over medium heat. Add squash, onion powder, salt, pepper to taste, cook until zucchini is softened but still crisp. 7 mins…

Add in the cream cheese, heavy cream and Italian spices. Cook until thick. Remove from skillet and add 1/4 cup of Parmesan.

Later this in your casserole dish.

To make topping combine Pork Rinds and Parmesan salt and pepper and mix. Put the topping over casserole and put in your preheated oven until bubbly and brown!
