The Keto Lady Taco Stuffed Peppers
These Keto Taco-Stuffed Peppers are a delicious, satisfying way to enjoy all the flavors of your favorite Mexican-inspired dinner — without sacrificing your goals!!!
Ingredients:
2 large bell peppers, halved and seeded
1 lb ground beef (80/20)
1/2 small yellow onion, finely chopped
1 clove garlic, minced
1 tbsp olive oil (optional)
1 tbsp no-sugar-added taco seasoning
1/4 cup water
1/2 cup shredded cheddar cheese
1/4 cup shredded Monterey Jack cheese
Salt and pepper to taste
Optional toppings: sour cream, guacamole, jalapeños, chopped cilantro, green onion
Instructions
Preheat oven to 375°F. Lightly grease a baking dish and set aside.
Arrange halved bell peppers cut-side up in the baking dish.
In a skillet over medium heat, brown the ground beef with onion and garlic. Drain excess fat.
Stir in taco seasoning and water. Simmer for 2–3 minutes until slightly thickened.
Spoon the seasoned meat into the peppers. Top with shredded cheeses.
Cover with foil and bake for 20 minutes. Uncover and bake another 5–7 minutes until the cheese is bubbly and golden.
Add your favorite toppings and serve hot!
