Keto Lady Tuscan Chicken Recipe

If you are menopausal, hormonal, or struggling with fat loss, it could be due to too much dairy or fat! If you’re looking for a non-dairy, clean keto recipe, here you go!

Ingredients:

• 4 chicken breasts

• 1 tablespoon olive oil

• 1/2 onion, chopped

• 1 can of diced tomatoes

• 1 jar of sun-dried tomatoes, drained

• 1 tablespoon Italian seasoning

• 1/2 teaspoon thyme

• Salt, to taste

• Pepper, to taste

• 1/2 cup balsamic vinegar

• Heavy whipping cream (optional, for creaminess)

Instructions:

1. Pour olive oil into the bottom of the crock pot.

2. Place chicken breasts in the crock pot.

3. Season chicken on both sides with salt, pepper, Italian seasoning, and thyme.

4. Add chopped onion, diced tomatoes, and sun-dried tomatoes on top of the chicken.

5. Pour balsamic vinegar over the mixture.

6. Cover and cook on low heat until chicken is cooked through, typically 4-6 hours.

7. Optional: Stir in some heavy whipping cream towards the end of cooking time for added creaminess.

I served this over sautéed cabbage!
