What you need:
- 1 ½ pounds stew meat or steak tips, cut into cubes
- 1 tablespoon olive oil, more as needed
- 3 teaspoons sea salt, divided
- 4 ½ cups beef broth, divided
- 2 tablespoons red wine vinegar
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 large bay leaf
- 1 pound turnips or 2 cups of radishes (both your choice), peeled and cut into bite-sized chunks
- 2 medium carrots (optional)
- 1 medium onion, diced
- 1 celery stalk, chopped
- 2 cloves garlic, chopped
- ½ teaspoon xanthan gum (you could use a little more if you want it thicker)
- 1 tablespoon fresh parsley
Instructions:
1. Heat a large pot over medium-high heat. Add oil and heat until hot and simmering.
2. Sprinkle the beef with 1 teaspoon of salt on both sides.
3. Add the beef to the pot in a single layer (work in batches) and cook until browned on all sides, about 5 minutes per batch. Let it form a crust.
4. Add additional oil as needed between batches. Once all browned, remove all beef to a bowl and set aside.
5. Add ½ cup beef broth and vinegar to the pot and scrape up the browned bits on the bottom of the pan over medium-high heat.
6. Add the beef back to the pot along with the remaining beef broth, tomato paste, Worcestershire sauce, and bay leaf.
7. Bring to a boil, reduce to a simmer, and add the turnips, carrots, onion, celery, garlic, and remaining 2 teaspoons of salt. Cover and cook over low heat for 1 ½ hours or until beef is tender.
8. Remove ½ cup of liquid from the pot to a small bowl. Sprinkle with xanthan gum and whisk well to incorporate. Return this mixture to the pot to thicken the stew. Add more xanthan gum if desired.
9. Continue to cook until beef and veggies are tender.
10. Remove bay leaf and sprinkle with parsley before serving.
