The Keto Lady Coconut Lime Pork Chops
The chops were delicious!! You could also do the same with chicken! I love the ginger and spices!

The Keto Lady Coconut Lime Pork Chops
Recipe-
4-6 Pork Chops
Medium diced onion
3 Cloves Garlic chopped
1 Inch of Ginger Chopped or use the kind I have shown ( freeze dried)
1 Lime ( zest and juice)
14 ounce can Coconut Cream
2 Tablespoons Coconut Oil
Cilantro (optional)
For the Rub-
1 TSP Cumin
1 TSP Coriander
1/2 TSP Cinnamon
1/2 TSP Chili Powder
Redmonds Salt
Instructions-
Rub the meat with spice mixture and salt and pepper each side. Let marinate as long as you can. Ideally overnight. If not a couple hours.
Melt Coconut oil in the pan, add your onion, garlic, and ginger…
Brown chops on both sides… then add in the coconut cream and simmer until chops are cooked through. Add the juice and zest of 1 lime, sprinkle with cilantro!
We served with garlic spinach. But any green is good!
This was so tasty. Add more ginger or garlic if you like!
