The Keto Lady Coconut Raspberry Muffins

These were so good and light! If you love coconut you’ll love these!!

Recipe:
3/4 cup Coconut Flour
3/4 cup Sweetner of choice ( I use mixed)
1/2 cup unsweetened shredded Coconut
1 Tablespoon Baking Powder
1/4 Tsp Pink Salt
6 Large Eggs
1/3 Cup Coconut Oil, (melted but not hot)
1/2 Cup Full Fat Coconut Milk ( I use canned)
1 Teaspoon Vanilla or Coconut extract
1 cup FRESH Raspberries ( can use frozen)

Preheat oven to 350 degrees

In large bowl whisk together coconut flour, sweetener, coconut, baking powder and salt.

In a second bowl mix eggs, coconut oil, coconut milk, and extract.. combine..

Pour the dry into the wet and hand mix folding in berries! Do NOT crush!

Fill each lined muffin cup ( I used silicone ) 2/3 full. Bake for 20-25 mins. Until lightly browned and firm!

Makes 16 muffins
