The Keto Lady “Potato” Salad

The Keto Lady “Mock” Potato Salad

4 Cups of cauliflower
4 eggs
4 slices bacon
2 stalks celery diced really small
3/4 cups of Mayo
2 TBS of Dijon mustard
2 TBS dill relish no sugar
Sea Salt Pepper
Olive oil to roast cauliflower
Green onion or chives for garnish or to taste

Preheat oven to 375 degrees
Cut cauliflower into bite size pieces and coat with the olive oil salt and pepper roast about 25 mins until fork tender... refrigerate to cool down

Boil eggs and cook your bacon
Chop up when cool
Combine all together in a large bowl so you can really toss and incorporate.. refrigerate overnight... add more Mayo if needed...

Add salt and pepper to taste add in green onion or chives to taste upon serving!
