Keto Lady Basil Lemon Chicken


Ingredients:

• 4 boneless, skinless chicken thighs or breasts (about 6 ounces each)

• 1 tablespoon olive oil or avocado oil

• 1/2 cup heavy cream

• 1/4 cup chicken broth

• 2 tablespoons fresh lemon juice

• 1 tablespoon lemon zest

• 1/4 cup fresh basil, chopped

• 1 pint cherry tomatoes, halved

• 2 cloves garlic, minced

• Salt and pepper to taste

• Optional: grated Parmesan cheese for garnish


Instructions:

1. Prepare the Chicken: Pound out the chicken thighs or breasts to an even thickness. Season both sides with salt and pepper. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.

Make the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the heavy cream, lemon juice, and lemon zest, bringing the mixture to a simmer.

3. Add the Basil and Tomatoes: Stir in the chopped basil and cherry tomatoes. Cook for 2-3 minutes until the tomatoes soften slightly and the sauce thickens.

4. Combine: Return the chicken to the skillet, spooning the sauce over the top. Let the chicken simmer in the sauce for 3-4 minutes, allowing the flavors to meld.

5. Serve: Garnish with additional fresh basil and optional grated Parmesan cheese if desired. Serve hot.
