Keto Lady Chicken Milanese
Ingredients:
• 4 boneless, skinless chicken breasts or thighs, pounded thin
• 1 cup Porking Good Panko Pork Rinds, crushed
• 1/2 cup grated Parmesan cheese
• 2 large eggs, beaten
• 2 tablespoons milk or heavy cream
• 1 teaspoon garlic powder
• 1 teaspoon Italian seasoning
• Salt and pepper to taste
• 2 tablespoons olive oil or avocado oil, for frying
• Fresh lemon wedges, for serving
• Optional: fresh arugula or mixed greens for serving
Instructions:
1. Prepare the Chicken: Pound the chicken breasts or thighs to an even thickness. Season both sides with salt and pepper.
2. Set Up the Coating: In one shallow bowl, combine the crushed Porking Good Panko Pork Rinds, grated Parmesan, garlic powder, and Italian seasoning. In another bowl, beat the eggs and mix in the milk or heavy cream.
3. Coat the Chicken: Dip each chicken piece first into the egg mixture, letting the excess drip off, and then into the pork rind mixture, pressing to adhere the coating evenly.
4. Fry the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the coated chicken pieces to the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through.
5. Serve: Serve the chicken hot, with fresh lemon wedges on the side for squeezing over the top.
Optional: serve over a bed of fresh arugula or mixed greens.
