Recipe:

- 1.5 sticks softened butter

- 1/2 cup plus 2 tablespoons brown sugar substitute (Swerve)

- 1/2 cup plus 2 tablespoons granular sugar substitute (MonkFruit)

- 2 eggs

- 1.5 teaspoons vanilla extract

- 2 cups almond flour

- 1.5 teaspoons baking powder

- 1 teaspoon baking soda

- 1/2 teaspoon salt

- 1 cup unsweetened coconut flakes

- 1 cup chopped pecans

- 2/3 cup chocolate chips

Instructions:

1. Preheat oven to 325°F.

2. Cream together the butter, brown sugar substitute, and granular sugar substitute until fluffy, about 2 minutes.

3. Mix in the eggs and vanilla extract.

4. Add in the almond flour, baking powder, baking soda, and salt. Mix until combined.

5. Stir in the unsweetened coconut flakes, chopped pecans, and chocolate chips.

6. Line cookie sheets with parchment paper. Place 12 (2-inch) balls of dough on each sheet.

7. Bake for 15 to 20 minutes, ensuring even cooking by rotating the pans halfway through.
