The Keto Lady Raspberry Mousse
Ingredients:
- 1/2 cup cottage cheese
- 1/2 cup heavy whipping cream
- 3/4 cup raspberries
- 2 tablespoons powdered Swerve
- 1 teaspoon Further Foods gelatin
- 3 tablespoons water
Instructions:
1. Prepare the Gelatin
- In a small bowl, sprinkle the gelatin over 3 tablespoons of water. Let it sit for a few minutes to bloom.
2. Blend the Base
- In a blender, combine the raspberries, cottage cheese, and powdered Swerve. Blend until smooth.
3. Incorporate Gelatin
- Add the bloomed gelatin to the raspberry mixture in the blender. Blend again until well combined.
4. Whip the Cream
- In a large mixing bowl, pour the heavy whipping cream.
- Using an electric mixer, beat the cream on medium-high speed until soft peaks form.
5. Combine and Fold
- Gently fold the raspberry mixture into the whipped cream until fully incorporated.
6. Serve
- Spoon the mousse into 4 ramekins or serving dishes.
- Refrigerate for at least 1 hour to set before serving.
