Keto Lady Chicken Cacciatore (Crockpot Recipe)

Ingredients:

• 4 boneless, skinless chicken thighs (or breasts, if preferred)

• 1 medium onion, thinly sliced

• 3 cloves garlic, minced

• 1 red bell pepper, sliced

• 1 green bell pepper, sliced

• 1 cup mushrooms, sliced

• 2 cans (14.5 oz each) petite diced tomatoes (no sugar added)

• 1 tbsp olive oil

• 2 tsp dried Italian seasoning

• 1 tsp dried oregano

• 1/2 tsp red pepper flakes (optional, for heat)

• Salt and pepper to taste

• Fresh parsley for garnish


Instructions

1. Prep the Crockpot: Lightly grease the crockpot with 1 tablespoon of olive oil.

2. Layer Ingredients: Place the sliced onions, garlic, and bell peppers at the bottom of the crockpot. Add the mushrooms on top.

3. Season the Chicken: Season the chicken thighs with salt, pepper, and Italian seasoning. Place the chicken on top of the vegetables.

4. Add Tomatoes: Pour the two cans of petite diced tomatoes over the chicken and vegetables. Sprinkle with dried oregano and red pepper flakes (if using).

5. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through (internal temperature of 165°F).

6. Serve: Garnish with fresh parsley and serve hot. Pair with zucchini noodles, cauliflower rice, or enjoy on its own for a hearty, low-carb meal.
