The Keto Lady Parmesan Shrimp Risotto

SOOOO GOOD!!!! Im going to write this recipe the way I made it! It would feed about 4. If you only have 2 people 1/2 it!

What you need :
2 bunches asparagus I did them ahead - I put them in a 350 oven ahead with olive oil and sea salt and black pepper till done!
2 Lb bag of Shrimp washed, peeled, and ready to cook
1 Shallot sliced fine
1/2 cup Ghee
1 TBLS Garlic ( I used freeze dried )
2 Bunches of Cauliflower ( riced )
1 Cup Mushroom I used baby bell rough chopped
1 1/2 cups Heavy Cream
2 Cups grated Parmesan Cheese ( grated )
1 tsp nutmeg
Couple TBLS fresh parsley
1 Lemon

How to put together:

Heat frying pan and melt the ghee
Add in shallot and saute 3 min
Add in the garlic saute about another min
Add in the cauliflower and cook until tender about 10 mins
Add the cream, the mushrooms and the shrimp, cook through until shrimp is done it will be nice and pink, about 7 mins
Add in parmesan cheese, and asparagus once all melted together, add nutmeg, salt and pepper to taste, fresh parsley and squeeze the lemon over top!

Serve nice and warm! Enjoy!!
