The Keto Lady Pumpkin Spice Granola
This is so good! The whole family will love it!! You can keep it in bars or crack up and use as a topping.
Recipe:
1 Cup Unsweetened Flaked Coconut
1 Cup Almonds
1/2 Cup Pecan Halves
1/2 Cup Pumpkin Seeds or Pepitas
2 Tablespoons Hemp Seeds
Optional- (2 Tablespoons Pumpkin Spice Keto Kreme) Collagen - MCT (or Pumpkin Spice Seasoning)
1/2 Teaspoon Salt
1/2 Cup (1 stick) Unsalted Butter
2 Tablespoons Brown Sugar Substitute
1/3 Cup Powdered Erythritol
1/2 Tsp Vanilla
Preheat Oven to 300
Line an 8x8 pan with parchment paper
Place Coconut, Almonds, Pecans, and Pumpkin seeds, Hemp Seeds in the Nutri Bullet, and pulse until coarse… ok to keep some large pieces.. (add in Keto Kreme if using, or Pumpkin Spice seasoning) and salt pulse.
In a sauce pan, melt the butter and brown sugar, remove from heat and add in vanilla and powdered sweetener (I use swerve)
Add the nut mixture into the saucepan and stir until well coated..
Press mixture firmly into the 8x8 pan. And bake for 25 mins. Until Golden. Once cool, Cut into bars, or crush up for granola topping!
Makes approximately 12 bars.
