Keto Lady Broccoli Cheddar Soup


Ingredients:

• 4 cups chicken broth (preferably low sodium)

• 4 cups broccoli florets, chopped

• 2 cups sharp cheddar cheese, shredded

• 1 cup heavy cream

• 2 tablespoons butter

• 1 tablespoon minced garlic (or 1 clove fresh garlic, minced)

• 1 small onion, finely chopped (optional)

• 1 small carrot, finely grated (optional)

• Salt and pepper to taste


Instructions:

1. In a large pot, melt butter over medium heat. Add onion (if using) and sauté for 5 minutes until translucent. Add garlic and cook for another minute until fragrant. If using grated carrot, add now and sauté briefly.

2. Pour in chicken broth and bring to a boil. Add chopped broccoli and reduce heat to a simmer. Cover and cook for 10-15 minutes, or until broccoli is tender.

3. For a creamier texture, blend some or all of the soup using an immersion blender. Alternatively, transfer half the soup to a blender, blend, and return it to the pot.

4. Stir in heavy cream and shredded cheddar cheese, stirring constantly until cheese is melted and the soup is smooth. Add salt and pepper to taste.

5. Serve hot and top with extra cheddar cheese if desired.
