The Keto Lady Cauliflower Rice Pilaf

A flavorful, nutrient-dense, low-carb alternative to traditional rice pilaf.

Ingredients:

  • 1 large head of cauliflower

  • ½ medium onion, chopped

  • 8 oz mushrooms, sliced

  • ½ lb asparagus, sliced

  • 1 medium zucchini or yellow squash, chopped

  • ½ tsp dried thyme

  • 3 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tsp lemon zest

  • 1 tbsp fresh chives, chopped

  • 1 tbsp fresh parsley, chopped

  • ½ tsp salt (or to taste)

  • Black pepper (to taste)


Instructions

  1. Prepare the cauliflower rice – Cut the cauliflower into pieces and either grate it or blend it in your Nutribullet until it resembles rice.

  2. Sauté the veggies – Preheat a large pan over medium heat with 1 tbsp olive oil. Add onions, mushrooms, asparagus, zucchini/squash, thyme, salt, and black pepper. Cook for 10 minutes, stirring occasionally.

  3. Add the garlic – Stir in the minced garlic and cook for another 3 minutes.

  4. Cook the cauliflower rice – Add the grated cauliflower, season with salt and pepper, and mix well. Cover with a lid and steam for 4 minutes (do not overcook).

  5. Finish & serve – Remove from heat. Stir in lemon zest, fresh parsley, and chives. Adjust seasoning if needed. Enjoy!
