The Keto Lady Cauliflower Rice Pilaf
A flavorful, nutrient-dense, low-carb alternative to traditional rice pilaf.
Ingredients:
1 large head of cauliflower
½ medium onion, chopped
8 oz mushrooms, sliced
½ lb asparagus, sliced
1 medium zucchini or yellow squash, chopped
½ tsp dried thyme
3 cloves garlic, minced
1 tbsp olive oil
1 tsp lemon zest
1 tbsp fresh chives, chopped
1 tbsp fresh parsley, chopped
½ tsp salt (or to taste)
Black pepper (to taste)
Instructions
Prepare the cauliflower rice – Cut the cauliflower into pieces and either grate it or blend it in your Nutribullet until it resembles rice.
Sauté the veggies – Preheat a large pan over medium heat with 1 tbsp olive oil. Add onions, mushrooms, asparagus, zucchini/squash, thyme, salt, and black pepper. Cook for 10 minutes, stirring occasionally.
Add the garlic – Stir in the minced garlic and cook for another 3 minutes.
Cook the cauliflower rice – Add the grated cauliflower, season with salt and pepper, and mix well. Cover with a lid and steam for 4 minutes (do not overcook).
Finish & serve – Remove from heat. Stir in lemon zest, fresh parsley, and chives. Adjust seasoning if needed. Enjoy!
