These muffins are perfect for breakfast, snack, or dessert! They’re loaded with protein and healthy fats to keep you full and satisfied.
Ingredients:
1 cup cottage cheese (blended until smooth)
1 ½ cups Keto OS Pro chocolate protein powder (or preferred keto-friendly protein)
4 large eggs (room temperature)
⅔ cup unsweetened cocoa powder
1 ¼ cup coconut oil (melted and cooled slightly)
1 ½ cups coconut flour
¾ cup sweetener of choice (adjust to taste)
1 tsp vanilla extract
Instructions:
Preheat your oven to 350°F (175°C). Line a muffin tin with silicone or paper liners.
In a blender or food processor, blend the cottage cheese until completely smooth.
In a large bowl, whisk together the eggs, melted coconut oil, vanilla, and blended cottage cheese.
In a separate bowl, combine protein powder, cocoa powder, coconut flour, and sweetener.
Slowly add the dry ingredients to the wet, mixing well to form a thick batter.
Divide the batter evenly among 12 muffin cups.
Bake for 20–25 minutes or until a toothpick comes out clean.
Let cool completely before enjoying. Store in the fridge for up to 5 days or freeze for longer.
