The Keto Lady Double Chocolate Macadamia Nut Cookies
(Makes 14)
Ingredients:
• 1 ½ cups almond flour
• ¼ cup coconut flour
• ½ tsp baking powder
• ¼ tsp salt
• ½ cup unsalted butter, softened
• ½ cup erythritol or preferred keto sweetener
• 1 large egg
• 1 tsp vanilla extract
• ½ cup sugar-free white chocolate chips
• ½ cup chopped macadamia nuts
Instructions:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a medium-sized bowl, sift/ mix together the almond flour, coconut flour, cocoa flour, baking powder, and salt
.
3. In a separate bowl, cream together the softened butter and erythritol until light and fluffy.
4. Add the egg and vanilla extract to the butter mixture, beating until well combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
6. Fold in the sugar-free white chocolate chips and chopped macadamia nuts.
7. Scoop the dough onto the prepared baking sheet, forming 14 equal-sized cookies.
8. Bake for 12-15 minutes, or until the edges are golden brown.
9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
