Ingredients:

• 2 cups almond flour
• 1/3 cup granulated sweetener of choice (e.g., erythritol, monk fruit)
• 2 teaspoons baking powder
• 1/4 teaspoon salt
• 1/4 cup melted coconut oil
• 3 large eggs
• 1/4 cup unsweetened almond milk (or any milk of choice)
• 1 tablespoon lemon zest
• 1 tablespoon lemon juice
• 1/2 cup fresh blueberries (or frozen, but thawed and drained)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

  2. In a mixing bowl, combine almond flour, sweetener, baking powder, and salt.

  3. In a separate bowl, whisk together melted coconut oil, eggs, almond milk, lemon zest, and lemon juice until well combined.

  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

  5. Gently fold in the fresh blueberries.

  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.

  7. Bake for 20-25 minutes or until the muffins are lightly golden and a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
